Pistachio mini Cupcake Recipe

I am not a big fan of pistachios, but my son loves it. So I thought why not make something with pistas. I had bookmarked a pistachio cupcake recipe from BBC goodfood a while ago. It definitely looked nice but I was not sure how it would taste with pistachios in it but thought will give it a try anyways :).

And that is how the finished product looked like and it definitely tasted yummy. The pistachios gave a nice nutty flavor, subtle and unusual but really yummm!!! My son just loved it.


100g pistachios
140g caster sugar
140g butter, very soft
2 eggs
140g self-raising flour
5 tbsp milk
Icing Sugar and water (optional)


  • Preheat oven to 160C. 
  • Grind the pistachios until very finely chopped in a food processor. 
  • Put the chopped pistachios into a large mixing bowl with the sugar, butter, eggs, flour and milk and beat until smooth. 
  • Divide between cases, then bake for 25 mins until a skewer poked in comes out clean. I used mini cupcake cases.
  • Cool on a wire rack.

Note - For the icing (optional), mix just enough water into the icing sugar to get a very thick but still runny.  icing. Put a spoonful of icing on each cake and let it gently spread to cover.
